Bún gà nướng sả: the Vietnamese noodle salad bowl. Chicken thigh marinated in lemongrass, garlic, shallot and fish sauce, cooked in the Ninja Crispi Pro until it caramelises at the edges, sliced over cold rice vermicelli with lettuce, cucumber, quick-pickled carrot, bean sprouts and a lot of herbs. Then nuoc cham poured over everything. Light, fresh and exactly right on a hot night.

Written for the Crispi Pro 6-in-1 before it has arrived, so the times are a starting point, not yet tested. Check the thickest piece reaches 75°C.

The herbs are not a garnish here. They are half the salad: mint, Thai basil and coriander, and more than seems sensible. Vietnamese mint or perilla from the Asian grocer, if they have it.

Lemongrass: use only the pale bottom third, outer leaves stripped off, and chop it very fine or it stays stringy. A mini food processor does it in seconds.

Make ahead: the chicken can marinate overnight, there is no acid in it. The nuoc cham keeps a week in the fridge, and the pickled carrot three or four days.

The method

Six moves.

  1. Marinate the Chicken

Mix the lemongrass, garlic, shallots, fish sauce, sugar, oil and pepper, and rub it all over the chicken. Marinate for at least 30 minutes, or overnight in the fridge in the lidded 5.7L glass container.

  2. Make the Nuoc Cham

Stir the fish sauce and sugar into the warm water until the sugar dissolves, then add the lime juice, garlic and chilli. Taste it: salty, sweet, sour and hot, all at once, with none of them winning.

  3. Pickle the Carrot

Toss the carrot with the vinegar, sugar and salt, and leave it at least 15 minutes, until it bends.

  4. Cook the Noodles

Cook the vermicelli as the packet says, usually 3–4 minutes in boiling water, then drain it and rinse it under cold water until it is cold, and leave it to drain well.

  5. Air-Fry the Chicken

Scrape most of the marinade off, so the bits of lemongrass and garlic don’t burn. Lay the thighs flat on the crisper plate in the 5.7L glass container; the Crispi Pro needs no preheat. Air Fry at 200°C for 12–14 minutes, turning halfway, until caramelised at the edges and 75°C in the thickest part. Rest for 5 minutes, then slice.

  6. Build the Bowls

Lettuce in the bottom, then a nest of noodles, then cucumber, sprouts, pickled carrot and a pile of herbs. Sliced chicken on top, then peanuts and fried shallots. Pour over plenty of nuoc cham at the table, and toss it through as you eat.

Spring onion oil

Optional · about 5 min more

Spring onion oil, mỡ hành: the green, glossy oil that goes over the top at every bún stall. Thinly slice 3 spring onions into a heatproof bowl with a pinch of salt and a pinch of sugar. Heat 3 tbsp neutral oil in a small pan until it shimmers, and pour it over. It sizzles, the onions go bright green and soft, and it is done.

Spoon it over the chicken just before serving. Five minutes, and it makes the bowl taste like the real thing.
