Malaysian Curry Leaf Crispy Chicken

Don’t swap the rice flour. It’s what gives that shattery Malaysian hawker-style crunch.

Ayam goreng berempah–style spiced chicken, air-fried crisp in the Ninja Crispi Pro and tossed in sizzling curry leaf, garlic and chilli butter.

The first of the air fryer recipes, written for the Ninja Crispi Pro before it has arrived, so the times and settings are a starting point, not yet tested.

Equipment: Ninja Crispi Pro (5.7L glass container and crisper plate), a blender or mini food processor, and a wok or frying pan. Marinate for 30 minutes at least, or overnight.

All-Crispi option, no pan. Toss the curry leaves, garlic and chilli in 1 tbsp oil instead of the butter. Scatter them over the chicken for the last 2–3 minutes at 200°C. Watch through the glass and pull it out as soon as the leaves go crisp.

Use thigh, not breast. Thigh stays juicy at high heat; breast dries out. Don’t overcrowd: a single layer with space between pieces crisps much better.

Marinate overnight if you can. It makes the biggest flavour difference. The Crispi glass bowl doubles as the marinating dish, so there’s one less container to wash.

Curry leaves: fresh leaves are easy to find at Asian grocers. Buy extra, because they freeze well for next time.

Leftovers: lid the glass bowl and refrigerate. Reheat straight from the fridge on Recrisp, since the glass handles going from cold to hot.

The method

Eight moves.

  1. Make the Spice Paste

Blend the lemongrass, garlic, ginger and shallots to a smooth paste with a splash of water. Stir in the turmeric, coriander, cumin, fennel, chilli powder, salt, sugar and soy sauce.

  2. Marinate

Toss the chicken through the paste until well coated. Marinate for at least 30 minutes. Overnight in the fridge is even better: use the Crispi glass bowl with its lid.

  3. Coat

Sprinkle the rice flour and cornflour over the chicken and toss until every piece has a tacky, craggy coating.

  4. Preheat

Put the crisper plate in the 5.7L glass container and preheat on Air Fry at 200°C for 3 minutes.

  5. First Cook

Arrange the chicken in a single layer, in two batches if it’s crowded, and spray or brush with oil. Air Fry at 200°C for 10 minutes.

  6. Crisp It Up

Flip each piece and spray with a little more oil. Then Max Crisp, or Air Fry at 220°C, for 6–8 minutes, until deep golden and 75°C inside the thickest piece.

  7. Curry Leaf Butter

While the chicken finishes, melt the butter in a wok or frying pan over medium heat. Add the curry leaves, chillies and garlic, and fry for 1–2 minutes until the leaves are crisp and the garlic is golden. Stand back, because the leaves spit.

  8. Toss and Serve

Tip the hot chicken into the pan and toss it through the curry leaf butter. Season with a pinch more salt. Serve with lime wedges, steamed rice and cucumber, and sambal and a fried egg for extra kick.
